Start by taking the pork tenderloin out of the bag & lay them together in your prepared baking dish that has been sprayed with cooking oil. Why are there two tenderloins in one bag (you might ask)? The tenderloin is a loin that runs from hip to shoulder & there are two because one on each side of the pig. In general, each loin will be around a pound, so you will have a couple pounds of meat all together. And it’s super lean, tender, & light in flavor, which is why the cut works so well in this dish. Some people will cook a tenderloin by tying it with twine to keep the two loins together, but with this dish the bacon will act as the twine would. MMMMMM bacon…
Sprinkle the pork with a good steak seasoning. Now you can wrap the whole slices of bacon around the tenderloin, tucking the ends under so that they don’t stick out. The bacon that I used is a thick sliced applewood smoked bacon & the length of the loin took 6 slices. Leave a little space in between each slice so that the sauce you pour on top can seep down in between them & get on the pork too.
You can make your own sauce if you’d like, but to save time for this dinner, I used this amazing discovery that my Costco carries. It’s so so so so good. Not too sweet, not hot, just the right amount of both. And with pork & bacon, it’s a total match made in heaven.
Now just pour the desired amount of saucaliciouness over the tenderloin. I like enough to give it a good covering, but not drench the meat. I still want to taste the pork.
Bake at 400 degrees for about 40-45 minutes, or until desired doneness. Side note: When you testing the temp of the meat, if it’s within 15 – 20 degrees of the desired doneness, take it out of the oven, wrap a piece of foil over the top of the dish, and let it rest for about 10 minutes. This will bring the cooking temp up & will prevent the roast from being overdone.
Slice & serve with roasted vegetables & additional sauce for dipping. MMMMMMMMMMM bacon….
Bacon Wrapped Pork Tenderloin with Raspberry Chipotle Sauce
Ingredients
- 1 Pork tenderloin
- 6-8 slices Bacon
- 1 tbsp Steak seasoning
- cooking spray
- 1/4 cup (or more) Raspberry chipotle sauce
Instructions
- Preheat the oven to 400 degrees. Spray baking dish with cooking spray.
- Sprinkle the tenderloin with steak seasoning.
- Place tenderloin in the center the dish. Wrap with bacon slices, tucking the ends of the bacon underneath the tenderloin.
- Pour sauce down the center of the tenderloin.
- Bake at 400 degrees for 40 minutes, or until desired doneness. Slice & serve!
