Preheat the griddle to medium heat, about 300 degrees. Lay a slice of bread on the work station. Layer the cheeses & meat on top. Add the second slice of bread & butter the top of it evenly & to the edges. Flip the sandwich over, butter side down on top of the hot griddle, being careful to not let contents spill out. While the sandwich is being grilled, butter the side of bread that is on the top. Do this for all of the sandwiches. When the bottom is golden brown, flip the sandwich over to grill the other side (again, be careful not to spill out the contents). Once both sides are grilled to golden brown perfection, place the sandwich on a cutting board. Using a sharp knife, press down all at once to slice through all the layers. Stack the sandwich pieces on the serving tray. Serve hot with soup, fries or chips, or just by itself.
