These are the easiest ever chicken burritos! Or tacos… Or chicken enchilada filling… Or chicken quesadilla filling…

Spray the crockpot with cooking spray. Add the chicken thighs.

Pour the salsa over the top!

Add the veggies, if desired. Not necessary; & totally delicious, either way.

Set the crockpot on low & come back in 3 hours. Use a slotted spoon to transfer the chicken to a plate so it can be shredded. Add the chicken back to the crockpot & stir. Serve with pinto/black beans, Spanish rice, shredded cheese, guacamole, sour cream, jalapeƱos… Basically add the accouterments of your choice! Your dinner will be a huge hit & the eaters will RAVE. Seriously. Easiest. Dinner. Ever!!

Easiest Ever Chicken Burritos

Ingredients
  

  • 8 Boneless skinless chicken thighs
  • 1 16 oz jar Salsa (your favorite!) If using fresh, just know the end result will have extra liquid
  • 12 Mini sweet peppers, diced optional

Instructions
 

  • Spray the crockpot with cooking spray.  Lay the chicken thighs in one layer on the bottom. 
  • Dump the salsa over the top of the chicken, spread evenly.  Add the peppers, if desired. 
  • Set the crockpot on low & cook for 3 hours. 
  • Transfer the chicken to a plate to shred.  Add the shredded chicken back to the crockpot & stir. 
  • Serve with tortillas, sour cream, shredded cheese, guacamole, beans, rice…  Accoutrements of your choice!  DEVOUR!
