Seriously, who doesn’t love zucchini sticks?? Add to that some crispy topped asparagus… OH MY. Yes please!

Typical “fried” zucchini recipes for the air fryer involve dredging the zucchini in flour, eggs & breadcrumbs. I discovered a small amount of breadcrumbs will suffice. Save on calories, & time?? (Insert Monica Geller voice:) OKAY!

This is so dang simple. Wash the zucchini (but don’t dry it!) and slice each into eighths. I sliced each zucchini in half & then each half into quarters. Put them into a ziplock bag & add two tablespoons of breadcrumbs. Zip & shake! The natural moisture inside the zucchini & the water from the fresh washing make a perfect combo for the crumbs to stick with no additional ingredients.

Spray the mesh basket of the air fryer with cooking spray. Add the zucchini sticks in one layer to the basket. I used 2 zucchinis & they fit perfectly.

For the next basket, I used asparagus. Just wash & slice off the bottom 2 inches of each stock. Spray the basket with cooking spray. Then spray the asparagus with cooking spray. Sprinkle them lightly with season salt.

When inserting the baskets into the fryer, make sure the zucchinis are closer to the top. They are thicker so need to be closer to the hot air.

Use the french fry setting but change the time to 12 minutes. Serve with ranch dressing, if desired. Then watch it all disappear!

Air Fryer Zucchini & Asparagus

Ingredients
  

  • 2 Zucchini or yellow squash
  • 20-25 Asparagus spears
  • 2 tbsp Breadcrumbs
  • 1 tsp Season salt
  • Cooking spray

Instructions
 

  • Spray 2 air fryer baskets with cooking spray. 
  • Slice 2 zucchini into 8 pieces.  (Slice them in half first, then each half into quarters.)  Set the zucchini in a ziplock bag & add the breadcrumbs.  Zip the bag & toss the zucchini to get each piece coated evenly.  Arrange the zucchini sticks in an even layer on one of the prepared mesh baskets.  Place the basket to the top position of the air fryer. 
  • Wash the asparagus & remove the bottom 2 inches off each stock.  Spray the asparagus lightly with cooking spray.  Sprinkle with season salt.  Place the basket in one of the lower positions in the air fryer.  
  • Use the french fry setting & decrease the time to 12 minutes.  Serve as a side dish to any meal or a stand alone dish with ranch dressing.
