It’s been so cold here in sunny Arizona – What’s up, Mother Nature? Usually we are using the A/C in February! It’s hard for me to want a salad when the weather is freezing… I just want a bowl of hot & yummy delicious comfort food. This dish completely meets that need & it’s so easy. We make versions of this on a regular basis.
First step: cook the meat. Tonight’s victim is this gorgeous sausage ring made with tomato & basil… Perfect compliment to the sauce! It comes in a tightly wound ring that looks like a pinwheel. I just stretch it out, dice & cook over low heat with a little avocado oil until done. No need to drain this one since there was very little fat.
Drain the tortellini. Add them to a large serving bowl. Pour the meat sauce over the top. If you want to be a little extra, add fresh grated parmesan & fresh thinly cut basil over the top. Serve with bread & veggies or a caesar salad. Quick & DELISH weeknight dinner!
Cheese Tortellini with Meat Sauce
Ingredients
- .5 – 1 lb pork sausage
- 1 tbsp avocado oil
- 24 oz Bertolli tomato sauce
- 1.5 lb cheese tortellini
- 1/4 cup fresh grated parmesan optional
- 2 tbsp fresh sliced basil optional
Instructions
- Add the oil to large saucepan. Brown the meat thoroughly over medium high heat.
- Add the sauce to the meat. Cover & simmer on low while the tortellini cooks.
- Drain the pasta. Transfer to a serving bowl. Pour the meat sauce on top. Sprinkle with fresh grated parmesan & fresh thinly sliced basil, if desired.
