This is the most amazing, super easy & crazy delicious soup! Pile it all in your crockpot & forget it. The hardest part is chopping your veggies.

Step 1: Add 3 cans Cannelloni beans to the pot.

Step 2: Add chopped carrots, celery, & onion. I used 4 carrots, 4 stocks of celery, about 1/2 a chopped onion & then went a little extra & added some chopped fresh fennel. Fennel is Uh.Maze.Ing.

Step 3: Add 2 cans diced tomatoes.

Step 4: Add chopped ham. I just piled the tomatoes & ham on top of the beans & veggies.

Step 5: Add seasonings. I found this fabulous gem at my local Costco & have been so impressed with its versatility. If you find it, GET IT! You won’t regret it. I literally sprinkled it {quite generously} over the center of the ingredients. If you don’t have any fabulous Bruschetta on-hand, you can use dried: oregano, basil, thyme, rosemary, black pepper, & garlic. Or any combination of these. And be generous with the green ones.

Step 6: Add chicken stock. I pretty much always have chicken bone broth on hand, and so used the whole box (4 cups).

Step 7: Turn your crock pot on low & come back in 8 hours.

Step 8: Serve & eat. OR you can be a little Extra & do a quick few pulses with your fabulous immersion blender to make your soup slightly thicker. Which is what I did. And then I added some fresh avocado & devoured two bowls full. Side Note: This soup gets more flavorful after sitting for about 24 hours. Having it for leftovers is a MUST DO.

Crockpot Ham & Bean Soup

Ingredients
  

  • 3 cans cannelloni beans drained & rinsed
  • 4 carrots diced
  • 4 celery stocks diced
  • 1/2 onion, yellow or white diced
  • 1/4 fennel bulb only, diced (optional)
  • 2 cans diced tomatoes
  • 2-3 cups cooked ham diced
  • 1/4 cup bruschetta seasoning use combo of oregano, basil, thyme & rosemary if no bruschetta seasoning is available
  • 4 cups chicken stock or bone broth
  • fresh avocado for serving (optional)

Instructions
 

  • Layer all ingredients in the crockpot in order listed above.  Turn to low & cook for 8 hours.  Serve hot as is, or pulse a few times with immersion blender to desired consistancy & serve.
