Tomato Zucchini Gratin

- 4-6 roma tomatoes
- 3-4 zucchini or summer squash, or combination
- 1 tbsp season salt, divided
- 1 - 1.5 cups freshly grated parmesan cheese, divided
- 1/4 cup bread crumbs
Preheat the oven to 400 degrees. Spray an 8 x 12 or 9 x 13 casserole dish with cooking spray.
Slice the vegetables in even, thin slices, using a mandoline if possible. Layer the zucchini in the bottom of the casserole dish. Add a layer of tomatoes on the top of the zucchini.
Lightly sprinkle the tomatoes with season salt, and then with a little parmesan.
Continue adding the layers in order till all vegetables are used, ending with tomatoes. Sprinkle lightly with season salt again, and then with the remainder of the parmesan on the top. Cover the dish evenly with the bread crumbs. Spray the whole thing with cooking spray.
Bake at 400 for 25 - 30 minutes, or until golden brown & bubbly.
