This is an amazingly easy, light, healthy & delicious side dish. My kids swear it tastes like pizza!

When my produce co-op has tons of squash & zucchini, I am always looking for ways to use it up. This dish is great for that. Start by slicing the zucchini or squash (or both!) really thin. I use my mandoline for this because it’s important to make sure the thickness is even for all the slices.


Start by spraying the casserole dish with cooking spray. Then lay one even layer of zucchini on the bottom. Lay one even layer of thinly sliced tomatoes on top of the zucchini. Sprinkle very lightly with a good season salt (garlic pepper will work also) and then lightly sprinkle freshly grated parmesan cheese.

Continue layering zucchini, tomatoes, seasoning, and parmesan until all the veggies have been used, but make sure the tomatoes are the top layer of the veggies. I had some sweet constellation tomatoes that needed to be used up so they’re what is pictured above for my top layer. The more colorful, the prettier it is. 🙂

Add the remainder of the parmesan cheese over the top of the tomatoes.

Sprinkle bread crumbs over the whole thing. If you have some fresh herbs like basil or oregano, thinly slice them & add them to the top. Now spray the whole dish with cooking spray.

Bake at 400 degrees for 25 – 30 minutes, or until the top is a beautiful golden brown & the cheese is melty & bubbly. Now sit back & be amazed that your kids ate all their vegetables & even compliment how great it is.

Tomato Zucchini Gratin

Ingredients
  

  • 4-6 roma tomatoes
  • 3-4 zucchini or summer squash, or combination
  • 1 tbsp season salt, divided
  • 1 – 1.5 cups freshly grated parmesan cheese, divided
  • 1/4 cup bread crumbs

Instructions
 

  • Preheat the oven to 400 degrees.  Spray an 8 x 12 or 9 x 13 casserole dish with cooking spray.
  • Slice the vegetables in even, thin slices, using a mandoline if possible.  Layer the zucchini in the bottom of the casserole dish.  Add a layer of tomatoes on the top of the zucchini. 
  • Lightly sprinkle the tomatoes with season salt, and then with a little parmesan.  
  • Continue adding the layers in order till all vegetables are used, ending with tomatoes.  Sprinkle lightly with season salt again, and then with the remainder of the parmesan on the top.  Cover the dish evenly with the bread crumbs.  Spray the whole thing with cooking spray.  
  • Bake at 400 for 25 – 30 minutes, or until golden brown & bubbly.
