Spray the crockpot with cooking spray. Add the chicken thighs.
Pour the salsa over the top!
Add the veggies, if desired. Not necessary; & totally delicious, either way.
Set the crockpot on low & come back in 3 hours. Use a slotted spoon to transfer the chicken to a plate so it can be shredded. Add the chicken back to the crockpot & stir. Serve with pinto/black beans, Spanish rice, shredded cheese, guacamole, sour cream, jalapeƱos… Basically add the accouterments of your choice! Your dinner will be a huge hit & the eaters will RAVE. Seriously. Easiest. Dinner. Ever!!
Easiest Ever Chicken Burritos
Ingredients
- 8 Boneless skinless chicken thighs
- 1 16 oz jar Salsa (your favorite!) If using fresh, just know the end result will have extra liquid
- 12 Mini sweet peppers, diced optional
Instructions
- Spray the crockpot with cooking spray. Lay the chicken thighs in one layer on the bottom.
- Dump the salsa over the top of the chicken, spread evenly. Add the peppers, if desired.
- Set the crockpot on low & cook for 3 hours.
- Transfer the chicken to a plate to shred. Add the shredded chicken back to the crockpot & stir.
- Serve with tortillas, sour cream, shredded cheese, guacamole, beans, rice… Accoutrements of your choice! DEVOUR!
