Okay, have you ever used more than one cheese on your grilled cheese? You’re missing out. Now I have to confess: I do not like American cheese. I do not like Swiss cheese. But something absolutely magical happens when you put them together. I mean, fairies & unicorns come out of hiding & dance around flinging glitter all over your space. Okay not really, but they should!

First layer, Swiss cheese. I had little squares of it, so used 3 per slice of bread.

This is 3 little pieces of Swiss – the bottom one is broken in half.
Lay a slice of American cheese right over the top.
If you’re adding meat to the sammie, do it here on top of the cheeses.

I had some ham I wanted to use up, so I sliced it thin & added it too. You could also use bacon, turkey bacon, sliced lunchmeat, or just stick with the cheese. Of course now just add the butter side down on the hot griddle & butter the slice of bread that is sticking up. Grill till golden brown & flip. Serve with Fresh Tomato Soup.

If you want to be a little Extra & a little Pinterest, cut your finished sammies in half or in quarters & pile them all on the same plate in different angles. It’s all about the presentation. 🙂

Grilled Cheese Sammies

Two types of cheese make this sandwich have super melty goodness.

Ingredients
  

  • 12 slices white bread
  • 12 slices American cheese
  • 12 ounces Swiss cheese
  • 12 slices lunch meat of choice optional
  • butter for spreading

Instructions
 

  • Preheat the griddle to medium heat, about 300 degrees.  
    Lay a slice of bread on the work station.  Layer the cheeses & meat on top. Add the second slice of bread & butter the top of it evenly & to the edges. Flip the sandwich over, butter side down on top of the hot griddle, being careful to not let contents spill out. 
    While the sandwich is being grilled, butter the side of bread that is on the top. 
    Do this for all of the sandwiches.  
    When the bottom is golden brown, flip the sandwich over to grill the other side (again, be careful not to spill out the contents). 
    Once both sides are grilled to golden brown perfection, place the sandwich on a cutting board.  Using a sharp knife, press down all at once to slice through all the layers. Stack the sandwich pieces on the serving tray.  
    Serve hot with soup, fries or chips, or just by itself.
