I found this gem in one of my new Instant Pot cookbooks… or a similar version, anyway. My parents always said that a recipe is just a guide. Isn’t that the truth?!

This was so easy – a super quick weeknight dinner. The end result is tender juice pork chops with perfectly cooked rice. Just add a veggie or salad & VOILA!

First things first. Turn the Instant Pot to sauté & add avocado oil. Season the chops with a good steak seasoning. Once the oil is hot, brown them on both sides. I didn’t want to overcrowd the pot (because then you lose heat & the browning isn’t awesome & it takes longer) so I only did two at a time. Once all four are done, set them on a plate. Keep the saute function on & pour the broth in to deglaze. Using a wooden spoon, scrape the bottom of the pot to get up all the yummy goodness that stuck to the bottom. It’s full of flavor & is going to make amazing rice. Another reason for deglazing (I read in one of the Instant Pot books) is because if there is any kind of burned or scorched food on the bottom of the stainless steel pot, the pressure cooker won’t come to full pressure. Interesting! So be sure to deglaze.

Add the scallions & the rice. The original recipe called for white rice. Who uses white rice? In my house, we have brown rice & wild rice because we don’t like boring. For this recipe, I used a combination of both. Stir. Add the pork chops & press them down into the rice mixture. Make sure that the chops are mostly submerged & the rice is completely submerged in the liquid. Hit cancel & add the lid. Turn the pressure cooker function to high & manually set the timer. If using thin chops (1/4″ or thinner), set the timer for 5 minutes. My chops where a good 3/4″ thick so I cooked them for 10 minutes. When cooking time is up, release the steam manually and add the pork / rice to a serving dish. Side note: I read that if you do a natural release on pork chops, they come out chewy. So weird! So I followed the instructions & did the manual release. It worked! The chops were falling apart when I did the transfer. OHMIGOODNESS. I served this with acorn squash that I made in the air fryer! What a great dinner.

Instant Pot Pork Chops & Scallion Rice

Ingredients
  

  • 4 Bone-in pork chops
  • 2 tsp Steak seasoning
  • 2 tbsp avocado oil
  • 2 cups chicken or beef stock
  • 1 cup rice
  • 1 bunch scallions diced

Instructions
 

  • Season pork chops with steak seasoning.  
    Using the sauté function, heat the oil in the Instant Pot.  Brown the chops, two at a time if necessary, on both sides (about 3 minutes per side) then set them on a plate. 
    Pour the broth into the pot & scrape all the brown bits up from the bottom of the pot.  Add the scallions & rice, stir.  
    Push the chops down into the rice mixture.  Make sure that all the grains of rice are covered by the broth.  
    Turn off the sauté function.  Add the lid & set the pressure cooker to high. Set the timer for 10 minutes for thick chops, or 5 minutes for thin chops. 
    Manually release the steam (it takes about 5 minutes). 
    Transfer to a serving dish.  Serve with your favorite veggies. Enjoy!
