Super tasty meatballs with little bites of heaven in a pot… What could be better??

You can make your own meatballs, of course! But to save time, I used these babies that I get from my local Costco. They’re so delicious & ALL NATURAL! The ingredients list (or lack thereof!) speaks for itself: ground turkey, breadcrumbs, chicken broth, egg, & seasonings. That’s it!!

First things first… Prepare the stuffing mix & put it in the microwave to warm up for 3 minutes. While that’s cooking, wash the mini peppers & slice off a little of the top to make an opening that will make it easier to stuff.

Spread a little of your favorite tomato sauce to the bottom of the crockpot that’s been sprayed with cooking spray. Add the stuffed peppers in a single layer on top of the sauce. Then add the meatballs. For this dinner, since I was feeding 6 people, I added two layers of meatballs. On top of that, slowly pour the remainder of the sauce, making sure each meatball is coated.

Cover. Cook on low for 3-4 hours. Sprinkle with fresh parmesan, if desired. Serve with remaining stuffing. SO GOOD!

Turkey Meatballs & Stuffed Mini Peppers

Turkey meatballs in tomato sauce with stuffed mini peppers make a deliciously comforting & easy weeknight dinner.

Ingredients
  

  • 12-15 Mini peppers
  • 1 cup Prepared stuffing
  • 2 lbs Turkey meatballs store bought or homemade
  • 1 jar Tomato sauce
  • 1/2 cup Freshly grated parmesan optional

Instructions
 

  • Spray the crockpot with cooking spray.  Spread a small layer of tomato sauce around the bottom of the pot.  
  • Wash the peppers & slice off the tops with a slight diagonal cut.  Stuff each pepper with the prepared stuffing.  
  • Lay the peppers in a single layer on top of the tomato sauce.  Add a layer or two of meatballs on the top of the peppers (depending on how many people you’re going to feed).
  • Pour the remaining tomato sauce evenly on top of the meatballs. Cover.  Cook on low for 3-4 hours.  
    Sprinkle with freshly grated parmesan, if desired.
